What Is ServSafe
ServSafe is a food and beverage safety training program run by the National Restaurant Association. It offers several separate exams, each aimed at a different role, and the name is often used to mean the manager certification that most restaurants need.
There are three main ServSafe tests that people ask about: ServSafe Manager, ServSafe Food Handler and ServSafe Alcohol. Each has its own course, its own assessment and its own certificate. ServSafe is a registered trademark of the National Restaurant Association, and this site is not affiliated with it.
ServSafe Manager
ServSafe Manager is the ServSafe Food Protection Manager Certification Examination. It is an ANAB-accredited certified food protection manager (CFPM) exam for managers, chefs and persons in charge. Many jurisdictions require at least one certified food protection manager per establishment, and this is the credential most of them accept.
The exam has 90 questions, takes up to 2 hours, must be proctored and leads to a certificate valid for 5 years. Most people searching for a manager ServSafe practice test are preparing for this exam.
ServSafe Food Handler
The ServSafe Food Handler program is the entry-level option for cooks, servers and other non-manager staff. Its assessment has 40 questions, no time limit and no proctor, and requires 75% to pass (70% on the California version). It is one of many programs that issue a food handler card; see our food handlers test guide for the full picture.
ServSafe Alcohol
ServSafe Alcohol trains servers, bartenders and managers in responsible alcohol service: checking identification, recognizing intoxication and handling difficult situations. Requirements for alcohol server training are set by states and localities. Our practice tests focus on food safety, so check servsafe.com for the current ServSafe Alcohol exam details.
ServSafe Exam Format
The ServSafe Manager exam is a proctored, multiple-choice test you take at a testing center, on paper with a proctor, or online with a remote proctor. The format at a glance:
| Feature | ServSafe Manager |
|---|---|
| Questions | 90 (80 scored + 10 unscored pilot) |
| Time limit | 2 hours |
| Passing score | 70% (at least 56 of 80 scored) |
| Delivery | Testing center, paper or online proctor |
| Certificate valid | 5 years (local rules may require earlier recertification) |
How Many Questions Are on the ServSafe Test
There are 90 questions on the ServSafe Manager test, but only 80 count toward your score. The 10 pilot questions are mixed in with the rest and look exactly the same, so treat every question as if it counts.
Is the ServSafe Test Multiple Choice
Yes, the ServSafe test is multiple choice, with one correct answer per question. Many questions are short scenarios, such as a delivery arriving at the wrong temperature or an employee reporting symptoms, and ask for the correct manager action.
Temperatures and Food Safety Topics
Temperatures appear throughout the exam, so a ServSafe practice test on temperatures is worth extra time. The manager exam follows the FDA Food Code, and these are some of the numbers to know:
- Temperature danger zone: 41°F to 135°F.
- Cold holding at 41°F or lower and hot holding at 135°F or higher.
- Cooking poultry to 165°F, ground meat to 155°F, and seafood, steaks and chops to 145°F.
- Cooling from 135°F to 70°F within 2 hours and to 41°F within a total of 6 hours.
- Reheating food for hot holding to 165°F within 2 hours.
The exam content is organized around five areas: providing safe food, safe food handlers, the flow of food from purchasing to service, food safety management systems such as active managerial control and HACCP, and facilities, cleaning and pest management.
ServSafe Scoring
You need 70% to pass the ServSafe Manager exam, which means at least 56 of the 80 scored questions correct. In other words, you can miss up to 24 scored questions and still pass. Because you cannot tell which 10 questions are unscored pilots, aim for a comfortable margin rather than the minimum.
The 70% figure comes from the ServSafe Manager FAQ. The 75% pass mark you may see elsewhere belongs to ServSafe Food Handler, and some jurisdictions set their own requirements, so confirm with your proctor. If you fail, ServSafe’s retest policy allows two attempts within 30 days. After a second failure you must wait 60 days, and you can take the exam no more than four times in 12 months.
Registration, Proctoring and Fees
You register for the ServSafe Manager exam through servsafe.com, either on its own or bundled with a course or book. Because the exam is proctored, you also choose how it will be supervised: at a testing center, with a proctor in a classroom, or online with a remote proctor using your own computer and webcam.
ServSafe sets its own prices, and they vary by exam, by bundle and by proctoring option. The ServSafe exam is not free, but many employers pay for manager certification, and you can buy the exam on its own without the course. The food handlers test is a cheaper, non-proctored option for staff who do not need manager certification.
For online proctoring, the 2-hour limit does not include the time it takes to launch the session and verify your identity, so set aside extra time.

ServSafe 7th Edition and Current Materials
Many textbooks and courses are labelled ServSafe 7th edition, and you will see searches for a ServSafe practice test 7th edition. What matters most is that your materials match the content outline ServSafe uses today and the current FDA Food Code (2022). Check servsafe.com for the edition it currently sells before buying a used book.
Our ServSafe practice test is written against the current content areas and the FDA Food Code 2022, rather than a single textbook edition.
How to Prepare for ServSafe
The best way to pass the ServSafe test is to combine a course or book with timed practice. A three-week plan works for most working managers:
| Week | Focus |
|---|---|
| 1 | Read or complete the course; write every temperature and time on one page |
| 2 | Study the flow of food, HACCP and cleaning; take a full practice test in study mode |
| 3 | Take two timed practice tests and review every explanation you missed |
Plan your sessions with the study planner for exams and count down to your booked date with the exam countdown. Key numbers stick faster when you make flashcards online and review them daily.
Take a ServSafe Practice Test
Yes, there is a free ServSafe practice test here. Our ServSafe practice test draws original questions from a bank covering every manager content area, with timed, untimed and study modes, a section breakdown and an explanation for every answer. ServSafe practice questions and answers with explanations teach the reasoning, which is what the scenario questions test.
Test Day Checklist
Use this ServSafe practice test guide checklist before your exam:
- Bring a valid government-issued photo ID with a name that matches your registration.
- For online proctoring, test your computer, webcam and internet connection ahead of time.
- Clear your desk and room; notes, phones and books are not allowed.
- Arrive early at a testing center, or log in early for online proctoring.
- Read each scenario twice and look for words like “first”, “best” and “most important”.
- Answer every question, since an unanswered question can only count as wrong.

Frequently Asked Questions
Is the ServSafe Test Hard?
The ServSafe Manager exam is moderately hard. It is a proctored, 90-question test that expects exact knowledge of temperatures, times, HACCP and manager responsibilities, and a 70% score is needed to pass. Candidates who finish a course, memorize the key numbers and take several practice tests usually pass on the first attempt.
Is the ServSafe Test Free?
No, the official ServSafe exams are not free. ServSafe sets the price, which depends on the exam and on whether you buy it with a course, a book or online proctoring. Many employers pay for manager certification. Practice can be free: our ServSafe practice test costs nothing and needs no account.
Is the ServSafe Practice Test the Same as the Test?
No practice test outside the official program uses the real exam questions, which are kept secure. Our ServSafe practice test uses original questions written to the same content areas and the FDA Food Code, so the topics and style are similar but the questions are different. That is why understanding each explanation matters more than memorizing answers.
How Many Questions Is the ServSafe Manager Test?
The ServSafe Manager test has 90 multiple-choice questions. Only 80 are scored; the other 10 are unscored pilot questions that ServSafe is testing for future exams, and you cannot tell which ones they are. You have 2 hours to finish and need at least 56 of the 80 scored questions correct.
